Peach & Cucumber Salad

A simple but refreshing salad with a cumin dressing.

What You’ll Need:

  • 1 big bowl
  • 1 whisk
  • 1 small pan
  • 1 zester


  • 2 peaches
  • 1 small cucumber
  • 1 lemon zest
  • 1 Lemon juice
  • 1 cup Oil
  • ½ cup white wine vinegar
  • ½ cup honey
  • 2 tbsp whole cumin
  • 1 bunch mint
  • 1 tbsp cumin powder

Prep Instructions:

  1. Wash and slice the peaches.
  2. Wash and cut the cucumber into half. Core it with a spoon and cut into semi-roundels.
  3. Zest the lemon and squeeze the juice.
  4. Chop the mint leaves.
  5. Take a small pan. Heat it on low flame. Add the whole cumin seeds and lightly toast until fragrant. Constantly toss the pan to avoid burning and let it cool completely.
  6. In a bowl whisk the white wine vinegar, whole cumin, honey and salt/pepper.
  7. Gradually add oil in small amounts and continue whisking until it thickens. Finish with lemon juice and zest.
  8. In another bowl mix together the peaches, cucumber, mint and cumin powder. Add the dressing.
  9. Toss till all the ingredients are nicely coated in the dressing
Tip: You can add more ingredients like raspberries, quinoa or couscous for a more wholesome meal.
