What You’ll Need:

  • Large glass bowl
  • 13 x 18-inch baking tray
  • Parchment paper

  • 2 lbs chicken drumsticks
  • 2 tbsp (30 mL) paprika
  • 2 tsp (10 mL) garlic powder
  • 1 ½ tsp (5 mL) salt
  • 1 tsp (5 mL) onion powder
  • 1/2 tsp (2 mL) ground black pepper
  • 2 tbsp (30 mL) olive oil
  • 2 tbsp (30 mL) lemon juice
  • 1 tbsp (15 mL) honey
  • 2 tbsp (30 mL) finely chopped fresh parsley

Prep Instructions:

  1. In a large glass bowl, toss together the chicken drumsticks, paprika, garlic powder, salt, onion powder, pepper, olive oil, lemon juice and honey. Marinate in the fridge for at least 1 hour. Pull the chicken out of the fridge 20 minutes prior to cooking.
  2. Preheat the oven to 400°F (200°C). Line the baking tray with parchment paper and set aside.
  3. Remove drumsticks from marinade and lay flat on baking tray; pour remaining marinade overtop.
  4. Place the prepared tray in the oven and cook for 30 - 45 minutes, turning once, or until beautifully caramelized and internal temperature reaches 165°F (75°C).
  5. Sprinkle with parsley to serve.

Tip: For an easy summer alternative, try grilling the drumsticks instead of roasting them in the oven.
